Inspired by ancient winemaking and the Chinese lunisolar calendar, whole bunches are fermented on skins for 30 days in traditional clay vessels, followed by natural aging in neutral oak. On the nose, it explodes with vibrant aromatics of orange blossom, yellow apricot, white peach, preserved jasmine, ginger, and loquat.
